My daughter has been making videos to complement her consulting practice and thought that it was time that I gave her my Eggplant Parmesan recipe, complete with details in a video.

So here it is. And for you who know even less Spanish than I do, El Guapo roughly translates a the handsome one — a self-selected moniker as I figured it best to select a name for myself.

I've been making Eggplant Parmesan for several years, more-so in recent times as my wife has preferred a meatless diet.
